1 can green soybeans, 2 medium carrots,
1 large onion, 2 tomatoes, 1 green pepper, 2 stalks celery, 1 large clove garlic.
Wash, grate, and cut fine all vegetables. Mix vegetables with soybeans and bake in lightly greased pan one hour. Serves four. soybean cutlets 2 cups boiled soybeans, 2 stalks celery,
2 onions, 2 carrots, 1 cup tomato juice.
Dice onions and celery, and saute in tomato juice. Drain water from soybeans and grind or chop. Grate carrot and mix ingredients. Form patties, dip in wheat germ or whole wheat crumbs, place on greased broiling pan, and broil for about io minutes.
Turn over and broil about £ minutes more or until they are as brown as desired. These may be baked instead of broiled. Allow 25 minutes for baking. Serve with tomato sauce.
Cutlets may be prepared in advance and kept in wax paper in the refrigerator to be broiled or baked when ready to serve. Drained soybean water may be added to soup, tomato juice, or other vegetable drink. Serves four. baked vegetable soy dish 1 lb. soybeans, 2 stalks of celery, 1 tomato, 2 tbsp. unsulphured molasses or honey, 2 quarts water, 1 onion, 1 green pepper, 1 clove garlic (if desired), 1 tbsp. oil.
Add juice of one lemon to water. Soak beans overnight in it. In morning boil for 2 hours or until tender. Pour off excess water, if any, and save for soup.
Chop celery, onion, green pepper, and cut up tomato or add tomato juice. Add to the mixture and bake in hot oven for 25 minutes. Remove from fire and sprinkle with oil. Add garlic if desired before baking. Serves four. baked soy surprise 2 cups cooked soybeans, 1 cup tomato pulp or fresh tomato, 1 small onioi1 1 tsp. unsulphured molasses, 1 slice green pepper, 2 stalks celery, 1 tsp. vegetable oil.
Dice onion, pepper, and celery very fine and cook for 5-6 minutes. Add beans, molasses or honey, and oil, and bake until brown. Serves four.
