(May also be served as dessert) 4 sweet potatoes, 2 tbsp. honey, 1 lb. tart prunes.
Wash prunes and scald with boiling water before pitting them. Cube the potatoes. Place into oiled baking dish, adding 2 cups of water and honey. Bake in moderate oven until tender and brown. Sprinkle with a little grated coconut. Serves four. scalloped potatoes and onions 8 potatoes, 3 onions, 2 tbsp. okra powder, finely cut parsley.
Scrub potatoes with vegetable brush leaving skins on. Slice potatoes thin. Slice onions. Place layer of sliced potatoes in bottom of oiled baking dish. Sprinkle with okra powder and finely cut parsley.
On top of this, place layer of sliced onion. Repeat, alternating the layers until top layer is’ potato. Add a little water and bake in moderate oven for 40 minutes before serving. Serves four.
