Beer Soup With Sweet Onion


15 mill tbsp walnut oil

1 large red onion, chopped

300 ml/1/2 pt/l 1/2 cups flat brown beer

300 ml/1/2 pt/l 1/2 cups water

Salt and freshly ground black pepper

5 ml/1 tsp sugar

Pinch of grated nutmeg

4 French bread sippets

60 ml/1/2 tbsp Cheddar cheese, grated

Heat the oil in a saucepan and gently fry (saute) the onion until golden. Add the beer and water, then boil for 10 minutes.

Season to taste and add the sugar and nutmeg. Place in four flameproof bowls and top with the bread sippets and grated cheese.

Brown under the grill (broiler) until the cheese has melted. Note: Sippets are slices of French bread baked in the oven.
