Bubble and Squeak
450 g/1 lb/2 cups mashed potato 225 g/8 oz/1 cups cooked Brussels sprouts or cabbage, chopped Salt and freshly ground black pepper Butter or margarine, for shallow-frying
Mix together the potato and greens. Season generously with salt and pepper. Heat a little butter or margarine in a heavy-based frying pan (skillet). Add the vegetable mixture to the pan and press into a pancake shape, Cook until browned on the underside, then turn over and brown the other side or brown the top under the grill (broiler). Serve straight from the pan.
Multi Bubble and Squeak
Prepare as for Bubble and Squeak, but substitute cooked mixed vegetables for the cabbage or sprouts.
