1 lb. bean curd
3 cups clear broth
1/2 oz. minced ham
3-4 minced fresh mushrooms
1 tbsp. peas
2 oz. minced chicken breast
1 tbsp- sherry
1 tbsp. cornstarch mixed with water
1 tbsp. chicken fat
Salt and pepper to taste To Prepare:
1. Cut the bean curd into tiny cubes, and parboil.
2. Boil the broth with ham, mushroom, peas and chicken breast. Then add the bean curd, salt and sherry. When it boils again, put in cornstarch, stirring constantly. Bring to a boil, sprinkle the chicken fat and pepper powder. This dish is a regional specialty of Fujian Province.
