Easy Vanilla Fat Bombs
(For 14 servings)
1/2 cup extra virgin coconut oil (55 g / 2 oz)
1/2 cup butter, grass-fed or more coconut oil (55 g / 2 oz)
10-15 drops Stevia extract (Clear / Vanilla)
1 cup macadamia nuts, unsalted (130 g / 4.6 oz)
2 tablespoon powdered Erythritol or any healthy low carb sweetener (20 g / 0.7 oz)
1 vanilla bean or 2 teaspoon sugar-free vanilla extract
Place the macadamia nuts into a blender and pulse till its smooth.
Mix with softened butter and coconut oil (either at room temperature or melted in a water bath). Add powdered Erythritol and stevia vanilla extract.
Pour into an ice cube tray or mini muffins. About 1V2 tablespoons of the mixture in each one will give 14 servings. Refrigerate for at least 30 minutes to let it solidify.
