A fancy and easily made bar cookie that is a fine treat for Vata and Pitta, it adds sweet and heavy aspects to a meal. These cookies are quickly made using a food processor with a steel blade.
Makes about 2 dozen cookies
1 cup sugar
1/2 cup (1 stick) unsalted butter, softened
1 teaspoon vanilla extract Vs teaspoon salt 1/4 cups flour
1/2 cup strawberry or raspberry jam 1 cup confectioners’ sugar
1 tablespoon lemon or orange juice
1. Preheat the oven to 350°F.
2. For the dough, beat the sugar, the butter, the vanilla, and the salt together in a mixing bowl until fluffy. Stir in the flour and blend well. Divide the dough into thirds. Using your hands, roll each third into a 9-inch rope. Place each rope 3 inches apart on an ungreased cookie sheet. Using your fingertips, make a ‘/2-inch depression down the center of each rope. The ropes will flatten to i-inch-wide strips. Fill the depressions with the jam. Bake for 1 to 15 minutes, or until they are golden. Cool on the sheet.
3. For the icing, blend the confectioners’ sugar and the lemon juice in a small bowl until smooth, then drizzle over the thoroughly cooled jam. When the icing is set, cut diagonally in i-inch bars.
note: If you are in a hurry, there is an alternate way of making these. Simply spread the dough in a pie pan or 8-inch square pan, then fill with jam, bake, and frost as directed. Cut into squares before removing from the pan.
