1 cup unbleached flour
1 cup whole wheat flour
2 cups paiked light brown sugar
1 teaspoon salt
1 cup (2 sticks) unsalted butter
3 cups quick-cooking oats
1/3 cup buttermilk or 1/2 cup yogurt
2 teaspoons vanilla extract
1. Preheat the oven to 350°F.
2. In a heavy saucepan, cook the dates, the granulated sugar, and the water until thick and well blended. Add the lemon peel and juice to the date mixture. Stir well and cool. Mix the flours, the brown sugar, and the salt together in a large bowl. Cut in the butter until well blended. Add the oats and mix well. Stir the milk and the vanilla together, then blend into dough. Pack a thin layer of dough on the bottom of a greased 13 x 9-inch pan or two 8 x 8-inch pans. Spread the fruit on top and pat the remaining dough over the fruit. The dough does not have to cover the fruit completely; it will spread during baking. Bake 30 to 40 minutes, until top is brown. Cool, cut into bite-size bars.
