An exceptionally rich dessert that is sweet, heavy, oily, bitter, and slighdy sour, this is the kind of chocolate pudding, cream-filled with crunchy crust confection, that you would serve at the conclusion of a very special dinner or as a party treat. Children love it. Eating some of Kaffa’s Dream reduces Vata and has a neutral effect on Pitta. Eating any more than a bite or two should remain a “dream” for Kapha.
Makes 16 ramekins or one 7 X 11-inch pan
FOR THE CRUST
1 cups graham cracker crumbs 1/2 cup (1 stick) unsalted butter, melted 1/2 cup granulated sugar 1/2 to 1 cup flaked coconut 1/4 cup finely chopped pecans
1 i$-ounce can sweetened condensed milk 8 ounces semisweet chocolate chips
1. Combine all the ingredients except the milk and the semisweet chocolate chips. Press two-thirds of the mixture into the pan or divide it evenly among the 16 ramekins or custard cups. Reserve one-third of the mixture.
2. Preheat the oven to 375°F.
3. Heat the milk in a saucepan over moderate heat. Blend in the chocolate chips and stir until the mixture thickens and the chocolate is well blended. Pour it over the crust, dividing it equally among the cups. Sprinkle with the remaining crumb mixture and press down lighdy. Bake for 1 minutes. Set aside to cool while preparing the next
FOR THE FILLINGS
8 ounces cream cheese, softened
1 cup confectioners’ sugar 1/2 pint heavy cream, whipped
1 teaspoon vanilla extract 1/2 cup coarsely chopped pecans
Beat the cream cheese and the sugar together in a small bowl. Fold in the whipped cream and the vanilla. Spread it on top of the cooled chocolate crumb crust. Sprinkle this layer with nuts. Refrigerate while making the pudding.
FOR THE PUDDING
17-ounce package dark chocolate pudding, or make Chocolate Custard Pie filling ( 199), if you have time 1 cups milk
1/2 cup semisweet chocolate chips
Mix the pudding with the milk following the package directions. Mix in the chocolate chips while the pudding simmers. Let it cool and then pour over the chilled cream mixture. Chill for 2 or 3 hours.
optional finish: In case this is not yet rich enough, top with great dollops of sweetened whipped cream and garnish with some shaved bitter chocolate and a few fresh whole strawberries, raspberries, or other favorite fruit.
