Lemon Sauce

This is a refreshing topping for plain and spicy cakes that is good for Vata. The sour taste of this sauce increases Pitta and Kapha somewhat.

Makes about 1 cup

1 cup sugar

1 tablespoon plus 2 teaspoons cornstarch Pinch of salt 1/2 cup boiling water

1 teaspoon grated lemon peel

3 tablespoons lemon juice (juice of 1/2 large lemon)

3 tablespoons unsalted butter

Mix the sugar, the cornstarch, and the salt in a small saucepan. Whisk in the boiling water and simmer for 10 minutes over moderate heat. Add the remaining ingredients and stir over low heat until the butter melts. Serve warm.
