Mushroom Bhaji Recipe

SERVES 4

175 g/6 oz/1 mushrooms, sliced

1 green (bell) pepper, sliced

1 onion, sliced

2.5 ml/1/2tsp salt

10 ml/2 tsp curry powder

5 ml/1 tsp ground turmeric

1.5 ml/1 tsp chilli powder 30 ml/2 tbsp oil

25 g/1 oz/1/2 creamed coconut

Plain boiled rice

Mix together the mushrooms, pepper, onion, salt, curry powder, turmeric and chilli powder. Stir well, then leave to marinate for 10 minutes. Heat the oil and fry (saute) the vegetables and spices for 10 minutes over a low heat, adding a little water and the coconut towards the end of the cooking time. Serve with rice and Curried Cabbage.
