Palermo Cabbage Recipe

SERVES 4 450 g/1 lb firm-hearted green cabbage, shredded 40 g/11/ oz/ 3 tbsp butter or margarine 15 ml/1 tbsp clear honey 15 ml/1 tbsp lemon juice Salt and freshly ground black pepper 60 ml/4 tbsp water 275 g/10 oz/1/2 tomatoes, quartered

Toss the cabbage in the butter or margarine over a moderate heat for 1 minute. Stir in the honey, lemon juice, a little seasoning and the water. Reduce the heat, cover the pan and simmer for 5 minutes. Add the tomatoes and cook for a further 5 minutes. Stir once or twice during cooking. Serve with any juices in the pan.
