Potato Pudding

SERVES 4

900 g/2 lb potatoes, peeled and grated

1 egg, beaten

Salt and freshly ground black pepper

Mix the ingredients together and place in a greased ovenproof dish. Bake in a preheated oven at 180°C/350°F/gas mark 4 for about 1 hour until soft in the centre and crisp on top.
