450 g/1 lb red cabbage, chopped 1 onion, chopped 1 eating (dessert) apple, chopped Salt and freshly ground black pepper 30 ml/2 tbsp vinegar 25 g/1 oz/ J2 tbsp butter or margarine 50 g/2 oz/ 1/2 2cup sultanas (golden raisins)
Mix together all the ingredients and place in a large casserole (Dutch oven). Bake in a preheated oven at 160°C/325°F/gas mark 3 for up to 2 hours. Alternatively, cook very gently on top of the stove, stirring occasionally, for about 45 minutes. Add a little water if necessary.
