5 oz. bean curd
1/2 oz. dried shrimp
6 dried mushrooms soaked in hot water
2 cups clear broth
1 tsp. soy sauce
2 tbsp. cornstarch mixed with water
1 tbsp. sesame oil
1 tsp. minced scallion
Salt to taste
1. Cut the bean curd into 2 cm. cubes and parboil. Soak the shrimp in hot water for five minutes, then take out. Save the shrimp water.
2. Put the bean curd, shrimp, mushrooms and the shrimp water into the broth. Bring to a boil, and salt, soy sauce and cornstarch. Boil again, then add sesame oil and minced scallion, and serve.
