SOYBEAN MILK

Soybean milk is a highly nutritious food and may be used to great advantage in place of cows milk. It is a fine substitute in cases of allergy or other conditions, where cows milk must be avoided.

After soaking the beans for 24 hours, they should be liquified or ground up, and the milk should then be pressed out. For flavoring, a little raw sugar or honey may be added.

Soybean milk is also obtainable ready prepared in health food stores. When using the ready prepared soybean milk, we recommend that it be mixed half milk and half water, and then be brought to a boil. One teaspoon of honey should be added to each cup of milk.
